To a certain extent it depends on what you envisage for the piece. If it is to be a natural edged piece turn it green so that you might retain the bark edge if desired. Also turn green if you fancy maximising what you might get from the burr by coring it. Then the seasoning will also be quicker as the thicknesses are smaller. Otherwise, I agree, painting with pva won't hurt.
